Ingredients

2 pounds boiling potatoes (about 6), peeled and cut into 1-inch chunks
1 pound green beans
8 carrots, cut diagonally into 1-inch chunks
1 pound broccoli, thick stems removed, tops cut into small florets (about 1 quart)
1/2 cup peanut butter
2 cloves garlic, crushed
1/2 teaspoon red-pepper flakes
1 tablespoon brown sugar
1/4 cup lemon juice (from about 1 lemon)
1 tablespoon soy sauce
3/4 teaspoon salt
1 cup hot water
2 scallions including green tops, chopped
1/3 cup chopped cilantro (optional)
2 cucumbers, peeled, halved lengthwise, seeded, and cut into 1/2-inch strips
1/3 cup toasted sunflower seeds or chopped peanuts, for garnish (optional)
