About 1 quart chicken stock, preferably organic
1 tablespoon olive oil
2 medium onions, peeled and finely chopped
2 cloves of garlic, peeled and finely chopped
3 sticks of celery, trimmed and finely chopped
1 3/4 cups uncooked risotto rice
2 wine glasses of dry white wine
Sea salt and freshly ground black pepper
4 ounces appenzeller or gruyere cheese, roughly chopped
4 ounces taleggio cheese, roughly chopped
6 tablespoons butter
2 ounces parmesan cheese, freshly grated
